Savoury muffins (makes 15)
A yummy treat to pack in your lunch box
method:
In a large bowl, add grated cheese, pepper, spinach and cream cheese (+- half the block)
Sift in flour, baking powder, mustard, salt and black pepper
Lightly beat eggs and milk together
Make a well in the centre of the dry ingredients and add egg mixture
Mix to just moisten, don't over mix
Three-quarter fill a greased muffin pan
Bake at 200 degrees for 12-15mins or until cooked

tips
* No need for a mixer, mixing with a wooden spoon is perfect
* Do not omit the mustard powder as it helps bring out the flavour of the cheese
* The amount of cream cheese, pepper and spinach can be to your liking
* I have used a red pepper for colour, but any bell pepper can be used
* An alternative to cream cheese is feta, +- 1 1/2 blocks. If using feta cheese instead of cream cheese, you may want to leave out
the salt
* Don't use cupcake cases (like I did) as the melted cheese sticks to them. Rather grease a muffin pan
* Can sprinkle sesame seeds on top before cooking
* Test if they are cooked by using a cake tester, if it comes out clean they are ready
