Celery soup (serves 5-6)
A yummy soup that tastes way better than it sounds
Method:
Place butter into pot, heat until melted
Add onion and potato and cook until onions are turning brown
Add chopped celery
Add chicken stock and cook for 15-20min until potatoes are soft
Transfer mixture into a blender and puree
Return puree to pot
Mix corn flour with milk and gradually stir it into the puree
Return to boil
Add chopped parsley with cream and mix well
Bring back to the boil

* Use a stick blender/smoothie blender and puree directly in pot
* Don't puree completely so that there are a few chunky pieces of potato and celery
