Cornflake meringues (makes 15 medium-large meringues)
This is a recipe that I happened to stumble upon, so although it's not a family recipe, it will definitely be added to our collection. It's super easy and hits the sweet tooth craving perfectly!
Method:
Beat egg whites while slowly adding the sugar until still peaks form
Add vanilla essence, chocolate and cornflakes and carefully fold until combined
Place spoonful's of meringue onto a baking tray and bake at 150 degrees C (300 degrees F) for 25mins or until slightly golden
Cool on a baking tray

tips
* Add about 1 Tbsp sugar at a time to the egg whites to ensure it is incorporated properly
* Don't make the chocolate pieces too big.
* You can substitute some of the dark chocolate for milk chocolate if you prefer
* You can make the meringues bite size if you prefer
