Ginger pudding
My mom has made this for as long as I can remember. It is light and so delicious. Perfect on a cold night with some hot custard.
Method:
Cream butter, sugar and egg.
Add jam, ginger, vinegar and salt and mix.
Alternate adding flour and milk (leave a little bit of milk out).
Mix the bicarb with the remaining milk and add to bowl.
Bake in a flattish pie dish on 180 degrees for approximately 40mins.
Mix all sauce ingredients together in a pot and bring to the boil slowly.
Pour over the pudding when it comes out of the oven.
