chicken and broccoli bake (serves 6)
A great, tasty dish that we will be making many many more times!
Ingredients:
750ml chicken stock 2 bay leaves 1 carrot, chopped 1 onion, chopped 1 clove garlic, crushed 6 peppercorns 1-2 heads of broccoli, depending on the size, broken up 1 chicken or 4 chicken breasts, cooked and shredded 1/2 cup of dry white wine (optional) 125g grated cheese Ingredients: Sauce 140g butter 70g (1/2 cup) flour 1 Tbsp Worcestershire sauce 1/2 cup milk 1 tsp mustard powder 1/2 tsp nutmeg salt and pepper |
Method:
Brown onions
Simmer together the stock, bay leaves, carrot, onion, garlic and peppercorns in a pot until softened
Add broccoli and cook until bright green (roughly 8mins)
Strain, reserving the stock and place the veg (not the bay leaves or peppercorns) in a dish with the chicken
Sprinkle with wine (if using) and set aside
Melt butter in a pot, add flour and cook for a minute
Slowly add the reserved chicken stock while whisking. Bring to the boil and simmer for 10mins
Add Worcestershire sauce, cream, mustard powder, nutmeg, salt and pepper and simmer
Pour sauce over the chicken and veg and mix together.
Grate cheese on top and bake at 180 degrees for 25-30mins

tips...
* Put the oven on grill for the last 10mins or so to give it a nice crispy top
* Serve with rice
