Chocolate mousse pie (makes a 25cm/ 10" wide pie)
This recipe will make you want to throw out all your diet plans! But it will be well worth it!
Ingredients:
Crust: 3 cups Oreo biscuits, crushed 113g (1 stick) unsalted butter, melted Filling: 340g semi-sweet chocolate 2 medium eggs 4 medium eggs, separated 2 cups (500ml) heavy/ whipping cream 6 Tbsp castor sugar Topping: 2 cups (500ml) whipping cream 1/4 cup castor sugar 1 tsp vanilla essence shaved chocolate for decoration |
Method:
Combine the crumbs and the butter and press onto the bottom and sides of a springform pan. Chill for 30mins
Melt chocolate
Scrape into a bowl, add 2 whole eggs and mix well, keeping the mixture warm
Add the 4 egg yolks and mix until blended
Whip the cream with the castor sugar until soft peaks form and set aside
Beat egg whites until stiff but not dry
Stir a little of the cream mixture and a little of the egg whites into the chocolate mixture to lighten
Fold in the remaining cream and egg whites until completely blended
Pour into the crust and chill for 6 hours
After the pie has set, remove from pan
Whip the remaining cups of heavy cream, castor sugar and vanilla and spread over pie
Top with shaved chocolate
