Coronation chicken (serves 4)
A quick, super simple dish. Although it looks a bit bland, it tastes delicious!
Method:
Chop onions and place in a microwave dish
Heat until nearly cooked (+- 7mins)
Mix in curry powder, then apricot jam.
Allow to cool before adding the mayonnaise. This is the sauce
On the stove, fill a pot with water, add the chicken stock and chopped celery
Add the chicken breasts and boil until cooked
Remove chicken from pot and chop into pieces (size depending on you)
Add the chicken to the sauce

* Serve with rice. The rice can be added to the sauce too, if that is preferred
