Snack bars (makes 18-20 bars, depending on size)
A quick, easy on-the-go snack and is deeelicious!
Method:
In a bowl, mix together oats, puffed rice, coconut, peanuts and 30g of chocolate chips
In a pot on low heat, melt honey, butter, peanut butter, vanilla essence and marshmallows together
Pour the warm, marshmallow mixture over the dry ingredients and mix well to ensure that everything is evenly coated
Line a baking tray with baking paper and press the mixture into the tray
Melt the remaining chocolate chips and drizzle over the mixture
While the chocolate is still warm, sprinkle the chopped nuts over
Place in the fridge for an hour to set.
Once set, slice into bars

* Can add chopped glace cherries or cranberries to the mix
* Don't let the marshmallow mixture sit for too long as the marshmallows become quite sticky when cool
* Melt the chocolate in a double boiler to prevent the chocolate from burning. If you don't have a double boiler, Put a bowl
over a pot of hot water (on the stove). Make sure that the bowl doesn't touch the water
* Store in the fridge so that they stay firm
