Tiramisu
One of those desserts that you just can't get enough of :)
Method:
Mix the coffee and brandy together in a shallow dish
Dip both sides of the Boudoir biscuit into the coffee mixture and arrange in the bottom of a square dish
Pour the balance of the liquid over the biscuits
Cream egg yolks and castor sugar together
Add the mascarpone cheese and mix until smooth
Beat egg whites until stiff and fold into cheese mixture
Pour mixture over biscuits and leave in fridge for 4 hours to set
Sprinkle with cocoa just before serving

tips...
* Can add an extra 2 tsp of brandy when adding the mascarpone cheese
* It's nice to use a smaller dish, so you can get 2 layers of biscuits and 2 layers of filling
