Flapjacks/crumpets (makes +- 15 medium sized flapjacks)
A recipe that my mom has used since I was little. These are soo easy and absolutely delicious!
Method:
Beat the egg in a bowl and gradually add the sugar
Add half the milk, then sift in flour and salt
Mix well, adding the remaining milk gradually and beat thoroughly
Add the melted butter and beat again
Stir in the baking powder
Grease a hot pan and drop spoonfuls of batter into the pan
When bubbles appear on top, flip over and brown the other side

* No need for a mixer, a whisk is perfect
* The mixture doesn't look like a lot, but it does go far
* When both sides are browned and the edges feel dry, the flapjacks are cooked
* Serve hot with honey/syrup/butter
