Fudge (makes +-30 squares)
A childhood favourite :) This particular recipe has been in my family for years and is super easy to make
Method:
In a large bowl, add condense milk, icing sugar and butter (no need to mix together)
Microwave for 9mins, checking every 2mins. It should turn a golden brown
Once 9mins is up, remove, add vanilla essence and mix with a wooden spoon
Spread into a greased baking tray
Once it starts setting, mark out your squares

* Use a big bowl as the mixture rises
* Sift the icing sugar to prevent lumps
* If you don't have icing sugar, you can use castor sugar or white sugar, just cook it for a bit longer (+-1 min extra) It will be
a bit more grainy but it will still taste like fudge
* You need to watch the fudge as it can boil over very easily
* All microwaves are different, so you may need to cook it for a little longer
* You can line your tray with baking paper instead of greasing it if you prefer
* Can add chopped pecan nuts once out the microwave as well as press in chocolate chunks while the fudge is still warm
