Quinoa salad (serves 6)
My first attempt at cooking (and eating) the latest superfood, quinoa. It is packed with protein and tastes great
Method:
Cook the quinoa: In a pot, add the quinoa and 4 x water (eg: half cup quinoa, 2 cups water). Bring to the boil with the lid on. Once boiled, take the lid off and simmer for 15 - 20mins. Drain
On a baking tray, spread out the almonds and toast under the grill for a few minutes. Allow to cool
Cook the bacon, mushrooms and butternut (separately) and allow to cool
In a large bowl, mix all ingredients together and serve

tips
* You can't add too much water to the quinoa when cooking
* NB - you need to watch the flaked almonds when toasting them as they can burn very easily. You can also toast them in a frying pan if it's easier
* Any vegetables can be added to the salad
* You can mix the salad and then place it on top of the quinoa if you don't want to mix them together
* Can use quinoa as a substitute for rice or pasta
* You can also serve it with cous cous or bulgar wheat if you don't want to use quinoa
