Choc chip cookies (makes +-30 medium sized biscuits)
These are so delicious and easy to make!
Method:
In a small bowl, mix together brown sugar, white sugar, margarine, vanilla essence and egg yolks
Add oats, coconut, salt, flour, baking powder and bicarbonate of soda
Mix in chocolate chips
Roll dough into small balls and place on a lined baking tray
Bake at 160 degrees for 12-15mins

tips
* There is no need to use a mixer, a wooden spoon works perfectly as you don't need to cream the egg and sugar
* You could add a pinch of cinnamon for extra flavour, just add it in with the dry ingredients
* Place the balls fairly far apart from each other as they flatten out so they need space
* Allow the cookies to sit on the tray for a minute or two as they are very soft when they first come out the oven
