Mushroom soup (serves 6)

A delicious, creamy soup.

Ingredients:

  • 45g (1.5 oz) butter or margarine
  • 45g (1.5 oz) flour
  • 900ml (30 fl oz) chicken stock
  • 1 punnet (250g) of mushrooms, finely chopped
  • 300ml (10 fl oz) cream

Method:

  1. Melt butter and add flour to butter
  2. Pour over stock and bring to the boil
  3. Finely chop the mushrooms and add to the pot
  4. Add cream and simmer for 3-4 minutes

Tips

  • To get rid of lumps once the stock is in, whisk the contents in the pot (before you add the mushrooms)
  • If you have a twister chopper - use it! Chopping a punnet of mushrooms can get a bit tedious
  • If you don't have enough cream you can substitute the remaining 50ml with milk, preferably full cream
