Mushroom soup (serves 6)
A delicious, creamy soup.
Ingredients:
45g (1.5 oz) butter or margarine
45g (1.5 oz) flour
900ml (30 fl oz) chicken stock
1 punnet (250g) of mushrooms, finely chopped
300ml (10 fl oz) cream
Method:
Melt butter and add flour to butter
Pour over stock and bring to the boil
Finely chop the mushrooms and add to the pot
Add cream and simmer for 3-4 minutes
Tips
To get rid of lumps once the stock is in, whisk the contents in the pot (before you add the mushrooms)
If you have a twister chopper - use it! Chopping a punnet of mushrooms can get a bit tedious
If you don't have enough cream you can substitute the remaining 50ml with milk, preferably full cream
