Broccoli soup (serves 6)
Another soup recipe that tastes way better than it sounds!
Ingredients:
2 Tbsp butter/ margarine
1 onion, chopped
1 stalk of celery, chopped
3 cups chicken stock
8 cups broccoli florets
3 Tbsp butter/ margarine
3 Tbsp flour
2 cups of milk
salt and pepper to taste
Method:
Melt the butter / margarine and sauté onion and celery until tender
Add broccoli and hicken stock, cover and simmer for 10 minutes
Puree the soup in batches in a blender or use a stick blender and puree directly in the pot
In a small saucepan, melt 3 Tbsp butter/ margarine, stir in the flour and add milk
Stir until thick and bubbles and then add it to the soup
Season with salt and pepper
Tips
A stick blender is easier to use and create less dishes
