Broccoli soup (serves 6)

Another soup recipe that tastes way better than it sounds!

Ingredients:

  • 2 Tbsp butter/ margarine
  • 1 onion, chopped
  • 1 stalk of celery, chopped
  • 3 cups chicken stock
  • 8 cups broccoli florets
  • 3 Tbsp butter/ margarine
  • 3 Tbsp flour
  • 2 cups of milk
  • salt and pepper to taste

Method:

  1. Melt the butter / margarine and sauté onion and celery until tender
  2. Add broccoli and hicken stock, cover and simmer for 10 minutes
  3. Puree the soup in batches in a blender or use a stick blender and puree directly in the pot
  4. In a small saucepan, melt 3 Tbsp  butter/ margarine, stir in the flour and add milk
  5. Stir until thick and bubbles and then add it to the soup
  6. Season with salt and pepper

Tips

  • A stick blender is easier to use and create less dishes
