Lentil soup (serves 6)
A tasty soup to warm you up.
Ingredients:
2 Tbsp butter/ margarine
1 onion, chopped
2 celery stalks, finely chopped
2 carrots, diced
1 cup lentils
grated rind of 1 lemon
5 cups of vegetable stock
salt and pepper to taste
Method:
Heat margarine and sauté the onions
Add the vegetables and allow them to sweat for 5-10 minutes
Stir in lentils, lemon rind, stock and salt and pepper
Bring to the boil, reduce heat and simmer for 15-20 minutes
Tips
You don't puree the soup so cut the vegetables the size that you will want to eat them
You can use chicken or beef stock instead of vegetable stock. I have also used ham stock before which gave it a really nice flavour
