Butternut soup (serves 6)
A delicious wintery soup.
Ingredients:
1kg butternut
200g onions, copped
1.2 litres chicken or vegetable stock
180ml coconut milk
1 clove garlic, minced
1 tsp curry powder
1/2 tsp cumin powder
salt & pepper to taste
Method:
Fry onions until soft, but not brown
Add garlic and fry for a further 3 minutes
Sprinkle over the curry powder and cumin and fry for a minute to release the flavours
Add the butternut and stock and cook for 20 minutes until tender
Add remaining ingredients and blend until smooth
Tips
Use a stick blender in the pot to smooth
Use coconut milk and a few croutons to decorate
