Butternut soup (serves 6)

A delicious wintery soup.

Ingredients:

  • 1kg butternut
  • 200g onions, copped
  • 1.2 litres chicken or vegetable stock
  • 180ml coconut milk
  • 1 clove garlic, minced
  • 1 tsp curry powder
  • 1/2 tsp cumin powder
  • salt & pepper to taste

Method:

  1. Fry onions until soft, but not brown
  2. Add garlic and fry for a further 3 minutes
  3. Sprinkle over the curry powder and cumin and fry for a minute to release the flavours
  4. Add the butternut and stock and cook for 20 minutes until tender
  5. Add remaining ingredients and blend until smooth

Tips

  • Use a stick blender in the pot to smooth
  • Use coconut milk and a few croutons to decorate
