Celery soup (serves 5-6)

A delicious soup that tastes way better than it sounds.

Ingredients:

  • 60g (2 oz) butter
  • 6 sticks of celery, chopped
  • 1 large onion, chopped
  • 1 large potato, peeled and chopped
  • 750ml (25 fl oz) chicken stock
  • 2 tsp (10ml) corn flour
  • 250ml (8.5 fl oz) milk
  • 125ml cream (4.2 fl oz)
  • 2 Tbsp (30ml) chopped parsley
  • salt & pepper to taste

Method:

  1. Place butter into a pot and heat until melted
  2. Add onion and potato and cook until onions are turning brown
  3. Add chopped celery
  4. Add chicken stock and cook for 15-20 minutes until potatoes are soft
  5. Transfer mixture into a blender and puree
  6. Return puree to pot 
  7. Mix corn flour with milk and gradually stir it into the puree
  8. Return to boil, add chopped parsley and cream and mix well
  9. Bring back to the boil

Tips

  • Use a stick blender and puree directly in the pot
  • Don't puree completely so that there are a few chunky pieces of potato and celery
